Intro

Rancher's Pie is a classic comfort food, but around here, we like to do it with a little Texas spirit - hearty wagyu ground beef from Phelan Farms, smoky spices, and a creamy mashed potato topping that’s just right. Perfect for those cooler nights when you want something that feels like a warm hug from the Lone Star State.

Directions

  • Preheat oven to 375°F.
  • Boil potatoes until tender, about 15 minutes. Drain and mash with butter, milk, salt, and pepper. Set aside.
  • In a large skillet over medium-high heat, cook wagyu ground beef until browned. Drain excess fat.
  • Add onion and garlic, cook until softened. Stir in tomato paste, smoked paprika, chili powder, cumin, salt, pepper, and Worcestershire sauce.
  • Add corn, black beans, diced tomatoes, and beef broth. Simmer until slightly thickened, about 10 minutes. Adjust seasoning as needed.
  • Transfer beef mixture to a baking dish, spread mashed potatoes evenly on top.
  • Bake for 20-25 minutes until the potato topping is golden and the filling is bubbly.

For the filling:

  • 1.5 lbs Phelan Farms Wagyu Ground Beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth

For the topping:

  • 4 large russet potatoes, peeled and cubed
  • ¼ cup butter
  • ½ cup milk (or more for creaminess)
  • Salt and pepper to taste
